Vinegret is a vegetable salad dressed with oil rather than mayonnaise, one of the lightest in Ukrainian cuisine.
About this dish: Vinegret (beet salad)
Vinegret is a salad Ukrainians eat both as a starter and as a side, and it suits fasting days especially well because it contains no animal products. Its base is boiled beet, potato and carrot, with sauerkraut, pickles and onion added. It is dressed with oil, often unrefined sunflower oil, which gives the salad its characteristic aroma. To stop the beet staining everything red, it is first tossed with oil on its own.
It is one of the lightest salads in the traditional kitchen, and most of its energy comes from the oil. By the table a 150 g portion is about 125 kcal. A tablespoon of oil is roughly 120 kcal, so every extra spoon in the bowl raises the count noticeably. Without oil, 100 g of vinegret is just vegetables, about 40 kcal. Sauerkraut adds fibre and tang, but together with the pickles also a fair amount of salt, so if you watch your salt, rinse the sauerkraut.
To make vinegret even lighter, use one teaspoon of oil per portion (about 45 kcal) and add lemon juice or cider vinegar for freshness. To raise protein, mix in beans, chickpeas or a chopped boiled egg, and it becomes a light dinner of its own. Make the base for two days and dress only the part you are about to serve.
Where the numbers come from
This dish has no single entry in the reference databases, so the values are calculated for a typical home recipe: ingredient shares multiplied by their composition in USDA and Ukrainian tables, including the fat that goes into the pan.
Vinegret of beet, potato, carrot, sauerkraut, pickles and oil. Calories are derived from protein, fat and carbohydrate at 4, 9 and 4 kcal per gram, so the numbers on the page never contradict each other.
Your kitchen will differ: real calories for a dish like this are usually within ±15%, which for this portion means 105 to 145 kcal. See the Method page for sources and calculations. These are general guides, not medical advice.
What changes the calories
