Chicken Kyiv is a chicken fillet rolled around herbed butter and coated in a crisp breading. It is popular in Ukraine and abroad.

About this dish: Chicken Kyiv

Chicken Kyiv is a chicken fillet wrapped around a piece of herbed butter, breaded and fried so that hot, fragrant butter stays inside. The classic version keeps the wing bone on and comes with mashed or fried potatoes. Its origin is disputed: French cooking knew similar butter-filled cutlets, while the name after Kyiv took hold in the twentieth century, and today it is one of the best-known dishes tied to the city.

The fat in this cutlet comes from two places: the butter inside and the frying oil. About 15 g of butter gives roughly 110 kcal, and the breading takes up a few more grams of fat in the pan. The chicken is the least caloric part and the main source of protein. By the table one cutlet (150 g) is about 380 kcal and 24 g of protein. A cutlet baked in the oven with less butter is 60-90 kcal lighter than one deep-fried.

To lighten it, bread in crushed oats or panko, bake on a rack and replace some of the butter with soft cheese and herbs. For a more balanced plate, serve it with vegetables and salad instead of mash. Cut into it carefully, because the hot butter can spurt, and count one cutlet as a portion.
