About this food: Raw white cabbage
This entry is raw cabbage, the white head you find in every Ukrainian market and the base of kapusniak and braised cabbage. Weigh it shredded, without the hard core and tough outer leaves. A head loses a visible share of weight when trimmed, so a kilo bought is less than a kilo of eating cabbage. A salad serving of 90 g, about a cup of shredded cabbage, is 23 kcal.
Cabbage changes a lot in the pan. Raw it is crunchy and low in energy at 25 kcal per 100 g, with 2.5 g of fibre, but braised cabbage cooked with oil and tomato paste picks up its energy from the fat, and it shrinks as water leaves. So log the finished dish by its recipe, using the raw weight you started with only as an ingredient.
For a quick salad, shred it thinly, add a pinch of salt and press with your hands until it softens and releases juice, then dress with oil and vinegar or lemon. A spoon of oil, sour cream or mayonnaise adds more energy than the whole bowl of cabbage, so measure the dressing.
Look for a heavy, tight head with crisp leaves. Whole heads keep for weeks in a cool place or the fridge, while cut cabbage should be wrapped and used within several days. Sauerkraut, red cabbage and savoy cabbage have their own numbers, so check if you eat those instead.
What it is high and low in
Raw white cabbage is high in vitamin K (72%) and vitamin C (44%) per 100 g (share of the daily reference in brackets). It is a good source of folate (11%) and vitamin B6 (10%).
It is low in calories (up to 40 kcal per 100 g) and fat (up to 3 g per 100 g). The rule is the same for every food: "high" means at least 20% of the daily reference in 100 g, "good source" means 10-19%. For protein it takes at least 8 g per 100 g and a fifth of the calories from protein.
How it compares with similar foods
We compared raw white cabbage with the five foods in our table that are closest in composition (Eggplant, Pumpkin, Red bell pepper, Raw cauliflower and Raw green beans), per 100 g.
Rank among the six: Protein (1 = most): 3rd of 6; Calories (1 = fewest): 1st of 6; Fibre (1 = most): 3rd of 6; Carbohydrate (1 = fewest): 2nd of 6. The order is computed from the USDA values, so it moves if the table changes.

Where the numbers come from
The values on this page come from USDA FoodData Central, SR Legacy (entry 169975: "Cabbage, raw"). It is the US government's reference database and its data is public domain (CC0). We retrieved it on October 4, 2026 and show it per 100 g of the food in the stated state (fresh). When USDA reports no value for a vitamin or mineral we write "no data", never zero.
The daily value column compares each amount with a reference adult: the average of the adult male and female values in the US and Canada Dietary Reference Intakes (age 19-30), a 2,000 kcal day and 50 g of protein. Sodium (2300 mg), sugar (90 g of total sugars, the EU reference intake) and saturated fat (22 g, under 10% of calories) are limits, not targets. These are general guides for healthy adults, not medical advice.
The portion weight matches one of USDA's own household measures for this entry.
