Mlyntsi are thin pancakes eaten with almost anything: sour cream, cheese, meat or jam. Unfilled they are fairly light.

About this dish: Mlyntsi (thin pancakes)

Mlyntsi are a thin milk or kefir batter cooked in a hot pan, made both for Masnytsia, the Ukrainian Shrovetide, and on any ordinary morning. They used to be cooked in a cast-iron pan for the whole family, stacked, and served with anything: sour cream, cheese, meat, mushrooms or jam. Filled pancakes folded into envelopes or rolls are often called nalysnyky in Ukraine.

Unfilled, mlyntsi are fairly light: two thin ones (110 g) are about 210 kcal. The calories change with the filling and with what greases the pan. Cheese adds 60-80 kcal per pancake, meat 70-100, and condensed milk or a chocolate spread can make one pancake heavier than two plain ones. A spoon of sour cream is another 30 kcal, so when you eat a stack the numbers add up unnoticed.

To lighten them, swap some of the flour for wholegrain, cut the sugar in the batter and grease the pan with a paper towel dipped in a drop of oil instead of pouring it. To add protein, fill them with curd cheese and herbs or chicken, and put another egg or egg white into the batter. Two or three pancakes with a protein filling keep you full longer than five with jam.

Where the numbers come from

This dish has no single entry in the reference databases, so the values are calculated for a typical home recipe: ingredient shares multiplied by their composition in USDA and Ukrainian tables, including the fat that goes into the pan.

Thin milk-and-egg pancakes with a little sugar, pan-fried with a drop of oil, unfilled. Calories are derived from protein, fat and carbohydrate at 4, 9 and 4 kcal per gram, so the numbers on the page never contradict each other.

Your kitchen will differ: real calories for a dish like this are usually within ±15%, which for this portion means 180 to 240 kcal. See the Method page for sources and calculations. These are general guides, not medical advice.
